Ghee Carrot Rice

Carrot rice is a famous Indian delicacy prepared with carrots and rice. Here is my version of  healthy, simple and very tasty carrot rice recipe.

Ingredients (For 2 servings)

Basmati Rice (Long grain rice) : 150 gm
Carrots : 2 (grated)
Green Chilly : 3 (Chopped)
Coriander paste : 1 table spoon
Bengal Gram Dal (Chana Dal) : 3 tea spoons
Black Gram (Urad Dal) : 2 tea spoons
Cumin seeds : 1 tea spoon
Salt : As per taste
Pure ghee (Clarified butter) : 3 table spoons





Method

Wash and cook the rice till done and set aside
Heat ghee in a pan add Bengal gram, black gram, cumin seeds, green chilly and fry for 1 minute.
Add grated carrot and fry for 2 minutes
Add salt as per taste and mix well.
Add coriander paste and fry for 2 minutes on slow flame
Add cooked rice to the above mixture and mix well.
Serve hot with raita or kurma
