Pulihora (Imli Rice) - Tamarind Rice

Pulihora is one of the most famous recipe from Andhra cuisine and it's prepared on almost every occasion. It is prepared with Tamarind Juice and rice seasoned with ground nuts, bengal gram, black gram dal, curry leaves etc. It is also used as Prasadam (Sacred food) in temples.


Rice : 250 gms
Tamarind  juice: 1 cup

Groundnut : 50 gms
Ginger : 1 inch peice
Green Chillies: 4
Red Chillies : 2
Curry Leaves
Bengal Gram Dal : 2tsp
Black gram : 2 tsp
Mustard seeds : 1 tsp

Oil : 100 ml
Salt : As per taste
Turmeric Powder : 1 tsp
Asefoetida Powder: 1 tsp


Prepare the rice in a cooker adding turmeric powder as you cook normal rice. Now open the cooker and spread the rice in a wide plate till it become cool.
Soak tamarind in small cup and extract the juice.
Now add salt and asafoetida powder to tamarind juice and boil till the mixture turns into thick paste.
Heat oil in a frying pan add ground nuts, bengal gram dal, black gram dal, ginger finely chopped, sliced green chillies, red chillies, mustard seeds and curry leaves fry till the ingredients turn light brown.
Now pour the tamarind paste and all fried ingredients in the rice and mix it well. Pulihora is ready to serve now.
