Dahi Vada - Perugu Garelu

Dahi Vada (Perugu Vadalu in Telugu) is a famous Indian snack prepared by soaking dal vadas in thick seasoned curd (Dahi). This is one of the most common snack recipe across Southern India. 

Ingredients  for Vada (for 6 pieces)

Black Gram Dal (Urad dal) : 1 cup
Salt : As per taste
Oil for deep fry

For seasoning 

Curd (Dahi) : 2 cups
Ginger : 1 inch piece (finely chopped)
Black gram : 1 tea poon
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Red Chilly (Whole) : 2
Curry leaves : 1 bunch
Salt : As per tatse
Oil : 2 tea spoons

For garnishing

Red chilly powder : 1 tea spoon
Black pepper powder : 1 tea spoon

Method

For making Vadas

Soak the black gram dal (Urad dal) for 2 hours.
Grind the soaked black gram into thick tight paste by adding little water at a time. 
Add salt and mix well.
Heat oil in a wok/karahi 
Divide the dal paste into six equal parts.
Take each divided dal paste portion, spread on your palm and pat it into round vada shape, make a hole in the middle and gently drop it in the oil.
Fry the vadas on slow flame till they turn into light golden yellow in color. 

Making seasoned curd

Beat the curd with a beater and set aside
Heat oil in a pan, add black gram, mustard, cumin seeds, chopped ginger, red chilly and curry leaves, fry till mustard starts splitting. 
Add salt as per taste and mix well. 
Add the fried ingredients to the beaten curd and mix well.

Making "Dahi Vada"

Dip each vada in cold water, remove immediately squeeze the excess water.
Soak all the vadas in the above prepared seasoned curd and soak at least one to two hours, allowing the vadas to absorb sufficient curd. 
Sprinkle the red chilly powder and black pepper powder over the vadas before serving.
Serve either chilled or at room temperature with Imli Ka Chutney
