Golden Egg Curry


This egg curry is slight different variation of normal egg curry. Normally many people make egg curry with plain boiled eggs. But this curry is made with boiled eggs fried in oil to achieve a golden color layor over the eggs. Hence this curry named as Golden Egg Curry

Ingredients

Eggs : As per requirement
Tomato : As per requirement of gravy
Onion : 2 (Chopped)
Green Chillies : 2 (Chopped)
Ginger garlic paste : 1 tsp
Turmeric Powder : 1/2 tsp
Corriander powder : 2 tsp
Garam Masala Powder : 1 tsp
Salt : As per taste
Oil : 2 tsp

Method

Boil and de shell the eggs
Heat oil in a oak/pan
Fry the de shelled eggs in the oil by gently turning sideways till they turn into golden brown color and keep aside
Add chopped onions, green chilles to the remaining oil in the pan and fry for 2 minutes
Now add ginger garlic paste stir fry for 1 minute
Add turmeric powder, corriander powder, garam masala powder and salt fry for 2 minutes more
Add water as per the gravy requirement
Now make some small cut marks over the fried eggs with a kitchen knife to allow the absorption of masala (spices)
Add the fried eggs to the boiling gravy and cook for few minutes.




Serve hot with rice or chapati
