Anchovies and egg plant curry


Anchovy is a small salt water fish and one of the most widely used fish in Andhra pradesh. This recipe prepared with dry anchovies and egg plant.


Ingredients

Anchovies : 250 gms











Egg plant : 250 gms
Onion : 2 chopped
Green Chillies : 2 finely chopped
















Tomato : 2 chopped













Ginger garlic paste : 1 tsp














Turmeric powder : 1/2 tsp
Curry masala powder : 1 tsp
Salt as per taste
Oil

Method

Wash anchovy fish thoroughly with fresh water
Cut egg plant into small pieces
Heat oil in a karahi add chopped onion, green chillies and fry till onion truns inot pink color
Add ginger garlic paste fry for few minutes
Add turmeric powder, salt and curry masala powder
Add egg plant and anchovies and fry for 5 minutes
Add chopped tomato and fry for 3 more minutes
Add water and cook till done

Serve hot with rice
