Gudlu Minapa Vadiyalu Koora

Minapa Vadiyalu (Black gram dal fritters) can be used as a combination in many vegetarian and non vegetarian recipes. Here's a simple and very tasty recipe prepared with eggs and black gram dal fritters (Minapa Vadiyalu)


Eggs : 4

Minapa Vadiyalu : 1 cup

Onion : 2 (sliced)
Green chillies : 2 (slitted)
Tomato : 2 (cut into small pieces)
Fenugreek seeds : 1 tsp
Curry masala powder : 2 tsp
Curry leaves

Coriander leaves for garnish
Salt : As per taste


Boil the eggs deshell and keep aside
Fry black gram dal fritters lightly in oil and keep aside
Heat oil in a pan,  fry sliced onions, green chillies, fenugreek seeds, and curry leaves till onion turns into light brown color.
Add tomato pieces fry for 2 minutes
Add salt and curry masala powder mix well
Add fried black gram dal fritters, boil eggs add water and cook till done
Garnish with coriander leaves

Serve hot with rice or roti
