Egg Potato Fry

This is a simple Gudlu vepudu/egg bhujia (Egg fry) recipe with a little twist, easy to prepare and very tasty too.


Ingredients

Eggs : 3
Potato : 2 (Large) Cut into small pieces
Onion : 2 (Finely chopped)
Green Chillies : 3 (Chopped)
Turmeric powder : 1/2 tea spoon
Red chilly powder : 2 tea spoons
Salt : as per taste
Oil : 2 table spoon





Method

Beat the eggs in a bowl with egg beater and keep aside.
Heat oil in a karahi/wok add potato pieces and fry for 5 minutes till potatoes turn into light golden color.
Add chopped onions, green chillies and fry for 2 more minutes.
Add turmeric powder, chilly powder, slat as per taste and stir fry for 2 minutes.
Pour the beaten eggs over it and mix well.
Stir fry on slow flame for 5 minutes before serving
Serve hot with rice or roti.
