Pumpkin is a high energetic and low fat vegetable which is widely available around the globe. Numerous varieties of recipes can be made with pumpkin.
Here is a simple pumpkin fry recipe made with pumpkin and sesame seed powder.
Pumpkin (Gummadi kaya) : 1/2 piece
Sesame seeds (Nuvvulu) : 1/2 cup
Onion : 1 big size (Cut into pieces)
Garlic cloves : 6
Red Chillies (Whole) : 2
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Black gram (Urad dal) : 1 tea spoon
Curry leaves : few
Turmeric powder : 1/2 tea spoon
Curry Masala Powder : 1 tea spoon
Oil : 1 table spoon
Salt : As per taste
Peel, deseed and cut the pumpkin into small pieces
Grind the sesame seeds into coarse powder
Heat oil in a pan
Add mustard seeds, cumin seeds, black gram (urad dal), red chillies, garlic, curry leaves and fry till the mustard starts splitting
Add onion pieces and fry for 2 minutes
Add pumpkin pieces and fry on slow flame for 10 minutes
Add salt, turmeric powder, curry masala powder and fry for 2 minutes
Add ground sesame seeds powder (Nuvvu podi) and fry on slow flame till the pumpkin pieces become tender
Serve hot with rice or roti.
