Totakura Minapa Vadiyalu Fry

Green leafy vegetables are good for health. Amaranth leaves (తోటకూర, totakura) is a green leafy vegetable with many health benefits. They are rich in Calcium, Iron, Potassium, Vitamin A, A1, B2 and C. They are highly beneficial during pregnancy and lactation. They prevent the retarded growth in children. Amaranth leaves are beneficial in the treatment of respiratory disorders like Asthma, chronic bronchitis, tuberculosis etc. It prevents premature ageing and also helpful in bleeding tendencies during menstruation.
Amaranth leaves are widely used in Andhra cuisine and Totakura Pappu (amaranth leaves with dal) is a famous recipe from Andhra. Here's another healthy and tasty recipe with amaranth leaves and black gram dal fritters.


Amaranth leaves (Totakura) : 2 bunches
Black gram fritters : 1 cup
Oinion : 2 (Chopped)
Garlic : 6 cloves
Red Chillies : 3 (Whole)
Curry leaves : few
Black Gram (Urad dal) : 1 tea spoon
Mustard seeds ; 1 tea spoon
Cumin seeds ; 1 tea spoon
Turmeric powder : 1 tea spoon
Curry masala powder : 1 tea spoon
Salt : as per taste
Oil : 1 table spoon

Wash and cut the amaranth leaves (Remove thicker part of the stem)
Heat oil in a pan fry the black gram fritters (Minapa Vadiyalu) on slow flame till they turn into light brown and keep aside.
Heat oil in a karahi/wok add mustard seeds, black gram (urad dal), cumin seeds, garlic cloves, red chillies, curry leaves and fry till mustard starts splitting.
Add chopped onion and fry for 2  minutes.
Add salt, turmeric powder, curry masala powder and mix well
Add chopped amaranth leaves cover with a lid and cook on slow flame till the water separates from the leaves.
Add fried black gram fritters and cook on slow flame till done.
Serve hot with rice or roti.
