Saggu Biyyam Jeedipappu Payasam - Tapioca Cashew Nuts Pudding

Tapioca/Sago known as Sabudana in Hindi and Saggu Biyyam in Telugu, is made of starch extracted from a plant root. It contains almost nil proteins and minerals. It is rich in carbohydrates and works as instant energy booster.
In India it is normally used in making breakfast and dessert recipes like sabudana kichidi, sabudana kheer etc. Here's is Sabudana Kheer/Tapioca pudding recipe with a little twist (adding cashew nut paste) which is extremely tasty and a must try for sweet lovers.

Ingredients

Tapioca (Saggu Biyyam) : 150 gm
Milk : 500 ml
Sugar : 250 gm
Cashew Nuts : 150 gm
Cardamom powder : 1/2 tea spoon
Pure Ghee (Clarified butter) : 2 tea spoons (optional)
Almonds : Few (for garnishing)

Method

Wash and soak Tapioca (saggu biyyam) for 15 minutes, drain the water and set aside.
Grind cashew nuts into smooth thick paste.
Boil milk in a vessel add soaked Tapioca and cook on slow flame for 10 minutes.
Add cashew nut paste and mix well.
Add cardamom powder.
Add sugar and cook on slow flame for 2 minutes (stir continuously to avoid sticking at the bottom).
Add ghee (clarified butter) and mix well (optional)
That's all,  yummy mouthwatering Tapioca pudding is ready to serve.
Garnish with chopped almonds and serve either hot or chilled.
