Totakura Carrot Paratha - Amaranth Carrot Paratha

This is a kids friendly healthy breakfast recipe prepared with Amaranth leaves and carrot. Green leafy vegetables are good for our health. Amaranth leaves fully packed with numerous health benefits, they are also very rich in essential vitamins and minerals.
Carrots are a good source of vitamin A and contains many useful vitamins and minerals. Generally kids don't like green vegetables. The best way to give them the benefits of green vegetables is combine them with any other main food like paratha, rice or roti. They.definitely love it. Here's an easy, tasty and healthy "Totakura Carrot Paratha" recipe for everyone.

Ingredients

Wheat flour : 2 cups
Amaranth leaves : 1 bunch
Carrots : Grated (1/2 cup)
Green Chilly : 2
Ginger : 1 inch piece
Cumin seeds : 1 table sspoon
Salt : As per tatse
Oil


Method

Grind green chillies, ginger and cumin seeds into smooth paste
Wash and de stem amaranth leaves.
Wash and grate the carrots.
Heat oil in a pan add green chilly, ginger, cumin seeds paste and fry for 2 minutes.
Add amaranth leaves,  fry for 3 minutes and set aside.
Take a bowl add wheat flour, salt as per taste, fried amaranth leaves, grated carrot and make a tight dough by adding little water at a time.
Make 2 to 3 inches round balls with the dough and roll them into flat round shapes like chapati.
Heat a tawa apply oil and roast the parathas both sides on medium flame till done.
Serve hot with dahi raita
