Ivy Gourd Biryani - Tindora Biryani

Ivy Gourd which is known as Dondakaya in Telugu and Tindora in Hindi is very rich in beta carotene and also considered a good source of proteins and fiber.
According to a medical study regular consumption of Ivy gourd helps in reducing blood sugar levels in patients with diabetes. In India this vegetable is normally used for making curry recipes. I've tried some thing different by using this healthy vegetable for making a Biryani dish. Ivy Gourd Biryani is very tasty, healthy and easy to prepare. 


Ingredients

Rice - 1 cup 
Ivy Gourd (Tindora)- 15 pieces
Yogurt - 1 cup
Cloves -8
Cinnamon - 3 to 4 one inch pieces
Bay leaves - 5
Star anise - 2
Coriander Seeds - 2 tea spoons
Cumin Seeds - 3 tea spoons
Cardamom - 5 
Garam masala powder : 1 tea spoon
Ginger Garlic paste : 1 tea spoon
Salt : As for taste
Oil : To fry
Ghee ( clarified butter): 3 tea spoons
Cashew nuts : 10 pieces


Method: 

Boil  two cup water in a bowl add Bay leaves,Cinnamon,Cloves,Cumin Seeds, Cardamom,Coriander Seeds,Star anise and boil for  10 minutes on slow flame.
Filter the water  with the help of a tea filter and set aside
Wash tindora and apply four slits on each tindora
Heat oil enough for deep fry in a wok / khadai and fry the slitted tindora till they turn in to light brown in color
Add 1 tea spoon garam masala powder, 1 tea spoon ginger garlic paste and 1/2 tea spoon salt to one cup yogurt and mix well
Now marinate the fried tindora in yogurt for 10 minutes
Heat ghee in a pan fry the rice for 2 minutes now add the garam masala water and salt as per the taste  to the rice and cook the rice till all most  done.
Now add marinated tindora to the partially cooked rice and mix well, cook till done on slow flame.
Garnish with cashew nuts.
Serve hot with kurma.
