Egg Uthappam

Uthappam is a famous breakfast dish in southern parts of India.It is normally prepared with the same batter used for making Idli. Here's a tasty version of Uthappam in combination with egg. Which is very tasty and easy to prepare. It can be either prepared with fresh or left over Idli batter.

Ingredients (For 4 pieces)

Idli batter : 4 cups
Eggs : 4 (1 for each uthappam)
Onion : 1 (large, finely chopped)
Green Chillies : 2 (Finely chopped)
Cumin seeds : 1 tea spoon
Salt to taste
Oil : 10 tea spoons

Method (For making Idli batter)

Soak 1 cup black gram dal and 2 cups idli rava in water separatesly for 5-6 hours

Grind the soaked urad dal into smooth paste
Squeeze the excess water from idly rave and add it to the ground dal
Add salt and make a thick smooth batter, keep over night for fermentation.

(For making Egg Uthappam)

Beat the eggs with egg beater, add chopped onions, green chillies, cumin seeds, salt to taste and mix well.
Heat a tava, apply 2 tea spoon oil on tava.
Spread idly batter in round flat shape as shown in picture and roast on medium flame for 3 minutes.
Spread the beaten egg mixture evenly over the top layer of Uthappam as shown in the picture and roast for 2 more minutes.
Gently turn the Uthappam to other side,  cook on low flame for 5 minutes.
Tasty Egg Uthappam is ready to serve
Serve hot with Chutney
