Healthy Mix Veg Curry

A very simple, healthy and delicious mixed vegetable curry prepared with Cauliflower, carrot and green peas.This tasty curry is very high in fiber, protein, vitamins and minerals and goes well with both roti and rice.

Ingredients 

Cauliflower : 1 small (Cut into pieces)
Carrot : 2 (Cut into pieces)
Green peas : 1 cup
Onion : 2 (Chopped)
Green Chillies : 2 (chopped)
Turmeric powder : 1 tea spoon
Curry Masala powder : 1 tea spoon
Salt to taste
Oil : 3 tea spoons

Method

Heat oil in a wok/karahi 
Add chopped onions, green chillies and fry till onion turns into light pink in color.
Add cauliflower,carrot pieces and green peas, fry on medium flame for 2 minutes.
Add turmeric powder, salt and curry masala powder, fry on low flame for 1 minute.
Add two cups water and cook on medium flame till done.
Serve hot with roti or rice.
