Imli Ki Chutney - Tamarind Chutney

Tamarind Chutney (Imli Ki Chutney) is a sweet and sour chutney recipe prepared with tamarind and jaggery. It is one of the most common accompaniment of all chats and many snack recipes in India. It is very easy to prepare and can be stored up to three months if refrigerated.

Ingredients

Tamarind (Imli) : 250 gm
Jaggery : 350 gm
Red chilly powder : 2 table spoons
Cumin seed powder : 1 tea spoon
Asafoetida : 1/2 tea spoon
Salt : As per tatse

Method

Soak the whole tamarind in water for an hour
Extract the juice from soaked tamarind by squeezing thoroughly in water, repeat the process till enough juice is extracted and throw away the pulp.
Boil the extracted tamarind juice in a vessel.
Add jaggery and mix well
Add red chilly powder, Cumin seed powder, asafoetida and salt as per taste, mix well.
keep on boiling till the juice thickens.
Transfer the contents to a clean jar and refrigerate.
