Eggpalnts are very rich in vitamins, minerals and also known to have many other nutritional values and health benefits. Some studies shows that it helps in prevention of many types of cancer. It makes a very good combo with green gram (moong dal). Here's a very healthy and tasty curry recipe prepared with this healthy vegetable and green gram (Moong dal).
Moongdal (pesarapappu) : 150 gms
Eggplants (vankayalu) : 4 (Medium size)
Onion : 1 (chopped)
Garlic pods : 5
Red chilies : 3 (split into 2 pieces)
Curry leaves : (few)
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Black gram dal : 1 tea spoon
Turmeric powder : 1 tea spoon
Oil : 2 table spoons
Salt to taste
Roast the moongdal in a pan till it turns into light brown and set aside.
Cut the egg plants into medium pieces.
Heat oil in a pan add garlic pods, mustard seeds, cumin seeds, black gram dal, red chilies, curry leaves and onions fry till brown.
Add turmeric powder and egg plant pieces fry on low flame.
Now add fried moongdal to the above mixture.
Add water and salt cook till done.
Serve hot with Rice or Roti.
