Soya Chunks Biryani - Meal Maker Biryani


As I mentioned in my earlier post "Cauliflower Soya Chunks Masala Curry", Soy or Soya are fully packed with many health benefits and it's a very good replacement for red meat due to the high protein levels in it.
Soy also makes very good combination with vegetables, non veg and rice. Here's a simple yet very healthy veg biryani recipe prepared with this wonderful health packed Soya Chunks.


Ingredients 

Basmati Rice : 2 cups 
Soya chunks : 1 cup
Onions : 2 (Chopped)
Green chilies : 4 (Slit vertically )
Cloves : 4
Cinnamon : 1 inch piece
Cardamom : 2
Bay leaves : 2
Garam masala powder : 1 tea spoon
Ginger, garlic paste : 2 tea spoons
Coriander powder : 1 teas spoon
Mint leaves : few
Coriander leaves : few
Ghee or oil : 2 table spoons
Salt to taste

Method 

Wash the rice and keep aside.
Boil 2 cups water in a vessel, add soya chunks to the boiling water and boil for 2 minutes and turn off the flame.
Allow the soya chunk to cool for some time,  squeeze the water off the soya chunks and set aside.
Heat oil or ghee in a vessel add cloves, bay leaves, cinnamon, cardamom fry for 1 minute now add onions and green chilies fry till  it turns brown, now add soya chunks , ginger, garlic paste, garam masala and coriander powder fry for 5 minutes on low flame.
Now add rice,mint leaves and salt mix well.
Add water in the above mixture in ratio of 1:2 (2 cups of water for every 1 cup of rice)
Cover the vessel with a lid and cook the rice done.
Healthy and tasty "Soya Chunks Biryani" is ready to serve,
Garnish with coriander leaves.

Serve hot with raita or kurma.
