Spinach comes under dark green leafy vegetables category which are full of vitamins and packed with many health benefits. Spinach contains powerful anti oxidant beta-carotene and very rich source of Calcium and Vitamin C. Here's a very healthy and tasty stir fry recipe prepared with this healthy Spinach leaves and Potatoes from Hema's Kitchen.Ingredients
Spinach : 1 bunch
Potato ( big) : 1
Onion : 1 (chopped)
Garlic pods : 5
Red chilies : 2
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Black gram dal : 1 tea spoons
Turmeric powder : 1/2 tea spoon
Curry leaves : few
Oil : 1 table spoon
Salt to taste
MethodWash the spinach and chop into medium size pieces keep aside.
Peel the potato and cut into small pieces.
Heat oil in a pan add black gram dal, mustard seeds, cumin seeds, garlic pods, red chilies,curry leaves and onions fry till mustard starts splitting.
Add turmeric powder and potato pieces cook till potato pieces are half cooked, add salt and mix well.
Now add chopped spinach stir fry till done.
Serve hot with rice or roti.
