Here's a very simple and Easy to cook "Egg Biryani" prepared with Boiled eggs and Basmati rice.
Ingredients
Basmati rice : 2 cups
Boiled eggs : 4
Onions : 2 ( chopped)
Green chilies : 4
Mint leaves : few
Cloves : 3
Cinnamon : 1 inch piece
Cardamom : 3
Bay leaves : 2
Garam masala powder : 1 tea spoon
Turmeric powder : 1/2 tea spoon
Oil or Ghee : 2 table spoons
Ginger paste : 1 tea spoon
Garlic paste : 1 tea spon
Coriander leaves : few
Salt to taste.
Method
Wash the rice and keep aside.
Heat oil or ghee in a pan add cloves, cinnamon, cardamom and bay leaves, fry for a minute.
Add chopped onions, green chilies, garlic and ginger paste, fry until light brown.
Add Turmeric powder, Garam masala powder, Mint leaves and Coriander leaves, fry for 2 minutes.
Now add rice and salt, mix well.
Add 4 cups of water in the above mixture.
Cover the vessel with a lid and cook the rice till partially done.
Now remove the lid and place the boiled eggs in the middle of partially cooked rice, cover with lid and cook on low flame for 5 minutes.
Serve hot with raita or kurma.
