Sweet Potato Curry

Latest studies shows that sweet potatoes are very useful in controlling blood sugar levels,  even in type 2 diabetes people.
They carry very reasonable  Glycemic Index (GI) when boiled. They are also very rich in Vitamin A and contain many essential vitamins and minerals along with antioxidants. Here is very healthy diabetic recipe "Sweet Potato Curry" from Hema's Kitchen. This curry is very tasty and easy to prepare.


Sweet Potato : 2 medium
Tomato : 1 large (chopped)
Onion : 1 medium (chopped)
Green Chilly : 2 (chopped)
Ginger garlic paste : 1 tea spoon
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Curry leaves : few
Oil : 1 table spoon
Curry Masala Powder : 1 tea spoon
Salt to taste


Wash. peel and cut the sweet potatoes into 1 inch thick pieces.
Heat oil in a pan/wok add chopped onion. green chillies, mustard seeds, cumin seeds, curry leaves fry till mustard starts splitting.
Add sweet potato pieces and fry for 2 minutes on medium flame.
Add curry masala powder, salt and fry on medium flame for 2 more minutes,
Add chopped tomato and fry for 2 minutes.
Add 2 cups water and cook till done.
Serve hot with rice or roti.
