Nimma Atukula Pulihora - Flattened Lemon Rice

Flattened rice is rich in vitamin B and contains very less carbohydrates.
This recipe is useful for obese and diabetic patients especially in weight reduction as well as maintaing optimum sugar levels. Here's a Delicious "Nimma Atukula Pulihora" prepared with flattened rice and lemon juice from Hema's kitchen.

Atukulu (Flattened Rice) : 2 cups
Lemon juice : 4 tea spoons
Turmeric powder : 1/2 tea spoon
Onion : 1 (chopped)
Green chilies : 4
Red chilies :2
Ginger finely chopped : 1 tea spoon
Curry leaves : few
Mustard seeds :2 tea spoons
Cumin seeds : 1 tea spoon
Ground nuts : 25 grms
Black gram dal : 2 tea spoons
Bengal gram dal : 2 tea spoons
Cashew nuts : few
Asafoetida : 1/2 tea spoon
Oil : 2 table spoons
Salt to taste


Take two cups of flattened rice (atukulu) in a bowl, wash them thoroughly and drain water keep aside.
Heat oil in a pan add black gram dal, bengal gram dal, ground nuts, cashew nuts, mustard seeds and cumin seeds fry till turn in to light brown now add green chillies,  red chillies, ginger pieces, onions and curry leaves fry till onions turns in to light brown now add turmeric powder and  flattened rice mix well.
Add salt, asafoetida and mix well.
Now add lemon juice to above prepared flattened rice and mix well.
Delicious Flattened Lemon Rice is ready to serve.
