Ridge Gourd and Ground Nuts Chutney

Ridge gourd skin chutney is one of the most common chutney recipe in Andhra. It is normally prepared with ridge gourd skin.
Here's a slight modified version of this chutney recipe in which whole ridge gourd and ground nuts are used to make it more healthy and tasty. 


Ingredients

Ridge gourd : 2 (wash and cut into medium size pieces)
Ground nuts : 1/2 cup (Roasted)
Green chillies : 4
Garlic pods : 5
Cumin seeds : 1 tea spoon
Curry leaves : few
Tamarind : 1 small lemon size ball 
Oil : 1 table spoon
Salt to taste

For seasoning

Mustard seeds : 1 tea spoon
Red chilly : 1
Black gram dal : 1 tea spoon
Curry leaves : few
Oil : 1 tea spoon

Method

Heat  2 tea spoons of oil in a pan add green chillies  cumin seeds, curry leaves, garlic pods, tamarind fry for 1 minute and keep aside.
Now heat remaining oil in a pan and fry ridge gourd pieces till they turn in to brown.
Grind the above ingredients along with ridge gourd and ground nuts by adding salt in to coarse paste.

Seasoning

Heat 1 tea spoon oil in a pan add mustard seeds, black gram dal, curry leaves, red chilly  fry till mustard starts splitting, pour the seasoning over the ridge gourd chutney.
Serve as a side dish with rice or roti.

  1. While this a perfect for tosai or idly, I will love it with rice. I have a craze about chutneys and I am feeling the same with gourd and nuts into the delish chutney you have made.
