Vankaya Dhaniyakaram

Simple and tasty egg plant curry recipe prepared with fresh egg plants and various spices from Hema's Kitchen.


Egg plants (Vankayalu) : 6 (Medium size)
Onion : 1 (Chopped)
Cumin seeds : 1 tea spoon
Red chillies :  2
Curry leaves : few
Coriander seeds : 1 table spoon
Turmeric powder : 1/2 tea spoon
Oil : 1 table spoon
Salt to taste


Roast the coriander seeds, cumin seeds, curry leave and red chillies in a pan till it turn into light brown, grind the roasted ingredients into a coarse powder and keep aside.
Heat oil in a pan add chopped onions fry till light brown.
Add egg plant pieces , turmeric powder and salt fry for 10 minutes on low flame.
Now add  coarse coriander powder into the above mixture. Mix well .
Stir fry for 5 minutes.
Serve hot with Rice.
