Long beans (Chinese Long beans) commonly known as Barbati in India. They are very rich in proteins and a very good source of Vitamin C, Vitamin A, Iron, Potassium, Magnesium and Manganese . Here's a very healthy and tasty "Yardlong Bean Masala Curry" prepared with Yardlong beans, raw coconut and various spices from Hema's Kitchen.
Ingredients
Long beans ( barbati) : 2 cups (Cut into 1 inch pieces )
Onion : 1 medium size (chopped )
Ginger : 1 1/2 inch piece
Garlic pods : 6
Coconut piece : medium size (cut into small pieces)
Poppy seeds : 1/2 tea spoon
Cumin seeds : 1/2 tea spoon
Garam masala powder : 1tea spoon
Turmeric powder : 1/2 tea spoon
Red chilly powder : 11/2 tea spoon
Oil : 1 table spoon
Salt to taste
Method
Grind ginger, garlic pods, coconut pieces, poppy seeds, cumin seeds and onion into smooth paste keep aside.
Heat oil in a pan, add long bean pieces, cover with a lid and fry for 5 minutes on low flame.
Add turmeric powder, salt, red chilly powder, mix well and fry for 2 minutes on low flame.
Now add ground paste and garam masala powder into above mixture, mix well and fry for 2 minutes on low flame.
Now add little water if necessary and cook on low flame till done.
Serve hot with Rice or Roti.
