Egg Cashew nut curry - Kodi guddu jeedipappu kura

Here is a simple and tasty curry which is prepared with boiled eggs and cashew nuts (jeedipappu).

Ingredients :

Eggs : 4 
Onions : 2 (chopped)
Green chillies : 2
Cashew Nuts (jeedipappu) : 1/2 cup 
Red chilly powder : 2 tea spoon
Tomato : 1(cut in to small pieces)
Garam masala powder : 1 tea spoon 
Turmeric powder : 1/2 tea spoon
Ginger & garlic paste : 2 tea spoons
Oil : 1 table spoon
Salt to taste

Method :

Soak the cashew nuts for 2 hours 
Boil and de shell the eggs
Heat oil in a pan add turmeric powder and fry the eggs in the oil by gently turning sideways till they turns into golden brown colour and keep aside.
Add chopped onions, green chillies to the remaining oil in the pan and fry for 2 minutes.
Now add soaked cashew nuts, tomato pieces,  ginger & garlic paste and fry for 2 minutes on low flame.
Add red chilly powder, garam masala powder and salt fry for 2 minutes more on low flame.
Add water as per the gravy requirement.
Now add the fried eggs to the boiling gravy and cook till done.



Serve hot with Rice or Roti.
