Red Sorrel Leaves Rice - Gongura Pulihora

Sorrel leaves rice (Gongura pulihora) is one of the famous recipe from Andhra cuisine and it is prepared with Red sorrel leaves paste.

Ingredients :

Rice : 2 cups 
Red sorrel leaves (Gongura) : 2 cups
Ginger : 1 inch piece (finely chopped)
Mustard seeds : 2 tea spoons
Black gram dal : 3 tea spoons
Bengal gram dal : 3 tea spoons
Cashew nuts : few
Green chillies : 2
Red chillies : 2
Curry leaves : few
Turmeric powder : 1 tea spoon
Ground nuts : 50 gms
Tamarind paste : 2 tea spoons
Sesame powder : 4 tea spoons
Asafoetida (hing) : 1 tea spoon
Salt to taste
Oil : 100 ml

Method :

Prepare rice by adding turmeric powder and spread the rice in a wide plate till it become cool.
Heat 2 tea spoons oil in a pan add Sorrel leaves fry till turns
soft and roasted , let it cool completely.

Grind the roasted sorrel leaves and salt into smooth paste.
Heat oil in a pan add ground nuts, bengal gram dal, black gram dal,cashew nuts, mustard seeds fry till mustard starts splitting.
Add curry leaves, green chillies, ginger pieces, red chillies fry till turns light brown.
Now add the sorrel leaves paste, asafoetida, sesame powder, tamarind paste and above fried ingredients in the rice and mix well.

Sorrel leaves rice ready to serve.
