Carrot kobbari Bobbatlu - Carrot Coconut Poli

Bobbattu, a traditional South Indian recipe of is part of Hema's kitchen.Here's another variant of Carrot coconut stuffed flattened bread (carrot kobbari bobbattu) from Hema's kitchen prepared with Carrot, Coconut & Wheat flour which is healthy and nutritious.

Ingredients :

Wheat flour : 1 cup
Grated carrot : 1/2 cup
Grated coconut : 1/2 cup
Cardamom powder : 1/2 tea spoon
Almond powder : 3 tea spoons
Cashew powder : 3 tea spoons
Sugar : 2 table spoons
Ghee : 2 table spoons
Salt

Method:

Take a bowl, add wheat flour, salt, little ghee, mix well and make tight dough by adding little water at a time.
Heat ghee in a pan, add grated carrot, grated coconut, sugar and mix well.
Cook on low flame till carrot turns soft.
Add cardamom powder, cashew, almond powder into above mixture and mix well.
Make small round balls with the dough.
Flatten the dough balls into round shapes just like chapati.
Take spoon of carrot mixture at the center and close the ends.
Roll the above stuffed carrot balls into round shapes like chapati.
Heat a tawa ,apply ghee and roast the bobbatlu both sides on low flame till done.

Serve hot .
