Guava is an all season fruit which has rich nutritional values. It is an excellent source of vitamin 'C' which contains more than three times daily recommended intake (DRI) in 100 grams of guava fruit. Daily intake of fruits rich in vitamin C helps the body develop resistance against infectious agents and scavenge cancer causing radicals from the body. It is also rich in vitamin A and potassium. To add extra nutrients in our daily diet, guava chutney can be prepared as a side dish. Here is the method for preparing guava chutney with main ingredient of guava (along with skin which contains higher content of vitamin C than pulp.
Guava (Jamakaya) pieces : 1 cup
Green chillies : 4
Cumin seeds : 1 tea spoon
Tamarind pulp : 2 tea spoons
Coriander leaves : 1/2 cup
Sat to taste
Oil : 4 tea spoons
For tempering : Curry leaves : few
Mustard seeds : 1 tea spoon
Black gram dal : 1 tea spoon
Fenugreek seeds : 1/2 tea spoon
Heat oil in a pan add green chillies, cumin seeds, coriander leaves, fry for 1 minute and keep aside.
Add guava pieces in the remaining oil and fry for 5 minutes on low flame.
Grind all the fried ingredients, tamarind pulp, salt into a fine paste.For tempering heat oil in a pan, add fenugreek seeds, black gram dal, curry leaves, mustard seeds and fry till the mustard starts splitting. Add this into guava paste and mix well.
Serve as a side dish.
