Elephant Yam Egg Stew - Kanda Kodiguddu Pulusu

Elephant yam have a number of significant health benefits and unique nutritional values.It is a rich source of essential fatty acids (Omega-3 fatty acids) which are known to increase the good cholesterol levels in the blood. Eating  yam helps in increasing the estrogen levels in women. The fiber content in elephant yam is naturally high it help reduce irregular bowl movement and constipation. Here is a simple recipe which is prepared with egg and elephant yam. It goes very well with rice.

Ingredients :

Eggs : 4 
Elephant yam : 200 gms
Onions : 2 (chopped)
Green chillies : 2 
Ginger & Garlic paste : 1 tea spoon 
Curry leaves : few 
Curry masala : 2 tea spoons
Tomato pieces : 1 cup
Tamarind pulp: lemon size
Turmeric powder : 1/2 tea spoon
Jaggery : 1 tea spoon
Fenugreek seeds : 1/2 tea spoon
Oil : 1/2 table spoon
Salt to taste

Method :

Boil and de shell the eggs.
Boil the elephant yam for 10 minutes and remove skin and cut into medium size pieces, keep aside.
Heat oil in a pan and fry the de shell eggs till they turns into light brown and keep aside.
Add onions, green chillies, fenugreek seeds, curry leaves to the remaining oil in the pan and fry for 2 minutes.
Add elephant yam and tomato pieces in to above mixture and mix well, 
Add ginger, garlic paste, curry masala powder, turmeric powder, salt into above mixture and fry for 2 minutes on low flame.
Soak tamarind pulp in water and make 2 cups tamarind juice and add it to curry.
Add the fried eggs into above boiled curry.
Finally add jaggery into above curry and cook on low flame for 10 minutes.
Serve hot with Rice.
