Vankaya batani bangaladumpa Mudda kura

Here is a simple, delicious and healthy vegetable curry prepared with egg plant, green peas and potatoes.


Ingredients :

Egg plant : 1/4 kg
Green peas : 1/2 cup
Potatoes : 2
Tomatoes : 3 (chopped)
Onions : 2 (chopped)
Green chillies : 2
Curry masala : 2 tea spoons
Ginger paste : 1/2 tea spoon
Garlic paste : 1/2 tea spoon
Oil : 1/2 table spoon
Salt to taste
Method :

Cut the egg plant into cubes and soak in water.
Peal and cut the potatoes into cubes.
Heat oil in a pan add onions, green chillies and fry till onions turn light brown,
Add green peas and fry for 2 minutes on low flame.
Add egg plant pieces, potato pieces and mix well.
Add salt, curry masala powder, ginger ,garlic paste and fry for 2 minutes on low flame.
Add tomato pieces and mix well, fry for 5 minutes on low flame.
Add little water and cook till done.


Serve hot with Rice or Roti.
