Kakarakaya Pulla Bellam Kura

Here is a simple, sweet and tangy curry recipe "kakarakaya pulla bellam". Which is prepared with bitter guard, tamarind and jaggery. It goes very well with rice.

Ingredients :

Bitter guard : 4 (medium size)
Onions : 1(chopped)
Tomatoes : 2 (chopped)
Jaggery : 2 tea spoons
Red chillies : 2
Curry leaves : few
Mustard seeds : 1 tea spoon 
Cumin seeds : 1/2 tea spoon
Garlic pods : 5
Turmeric powder : 1/2 tea spoon
Curry masala powder : 1 tea spoon
Tamarind juice : 1/2 cup
Oil : 4 tea spoons
Salt to taste

Method :

Wash and cut the bitter guards into round pieces.
Heat oil in a pan add mustard seeds, cumin seeds, red chillies, curry leaves, garlic pods, onions and fry till all the ingredients turn light brown.
Add turmeric powder, bitter guard pieces, salt and fry for 2 minutes on low flame.
Add curry masala powder, tomato pieces and fry for 2 minutes on low flame.
Add little water and cook for 2 minutes on low flame.
Now add tamarind juice, jaggery and cook till done.
Kakarakaya pulla bellam kura is ready to serve.
Serve hot with rice.
