Bottle Gourd Burfi - Sorakaya Burfi

Here is a simple dessert recipe bottle gourd burfi (sorakaya burfi), which is prepared with bottle gourd, jaggery and rice flour. It is delicious and easy to prepare.
Ingredients :

Grated bottle gourd (sorakaya turumu) : 1 cup
Jaggery  : 1 cup
Rice flour : 1 cup
Grated coconut : 1/4 cup
Sesame powder : 1 table spoon
Ghee : 1/4 cup
Cardamom powder : 2 tea spoons
Cashew nuts : few
Pistachios : few

Method :

Heat ghee in a pan add grated bottle gourd fry for 10 minutes on low flame,
Boil little water in a vessel add jaggery and make thick syrup by stirring continuously.
Add fried bottle gourd into jaggery syrup and mix well.
Add grated coconut, sesame powder, rice flour, cardamom powder and mix well, cook on low flame till the mixture turns thick paste.
Remove from heat and pour the mixture into greased plate, spread it and garnish with cashews and pistachios.
Let it cool and then cut into square shapes.
Bottle gourd burfi is ready to serve.

  1. We make Bottle guard halwa but not with jaggery, I am getting really intrigued with using jaggery fro sweetener in my recipes now.. shall try this one for sure.

  3. Never tried gourd's version of burfi but I have to say that those pieces are really tempting me.
