Potato Spinach Fried Rice

Here is a simple and healthy rice recipe which is prepared with basmati rice, spinach (palak) and potato.
Ingredients :

Basmati Rice : 1 cup 
Spinach : 2 bunch
Potato : 1 (medium size)
Green chillies : 4
Ginger pieces : 1 tea spoon
Garlic pieces : 1 tea spoon
Ghee : 4 tea spoons
Amchur powder : 2 tea spoons
Oil : for deep fry
Salt to taste

Method : 

Wash and cook the rice till done and keep aside.
Wash and chop the spinach.
Peel and cut the potato into small pieces.
Heat oil in a pan add potato pieces,  fry till they turns light brown and keep aside.
Heat ghee in a pan add ginger pieces, garlic pieces, green chillies fry for 1 minute.
Add chopped spinach into above mixture and fry for 5 minutes on low flame,
Add cooked rice, salt and mix well.
Add fried potato pieces,  amchur powder into above mixture and mix well.
Potato spinach fried rice is ready to serve.
Serve hot with raita.
