Gummadikaya Pulusu Kura - Pumpkin Stew

Gummadi kaya pulusu (Pumpkin stew) is another famous Andhra veg delight. It is prepared with pumpkin and tamarind juice.
 Ingredients :

Pumpkin pieces (gummadikaya) : 1cup
Onions : 2 (chopped)
Green chillies : 2
Red chillies :2
Curry leaves : few
Mustard seeds : 1 tea spoon 
Fenugreek seeds : 1/2 tea spoon
Cumin seeds : 1/2 tea spoon
Grated Jaggery : 2 tea spoons
Tamarind juice : 1/2 cup
Red chilly powder : 1/2 tea spoon
Turmeric powder : 1/2 tea spoon
Oil : 1 table spoon
Salt to taste



Method :

Heat oil in a deep bottom pan add fenugreek seeds, cumin seeds, mustard seeds fry till mustard starts splitting.
Add red chillies, green chillies, curry leaves, onions fry till onions turns light brown,
Add pumpkin pieces, turmeric powder. red chilly powder, salt and mix well, fry for 2 minutes on low flame.
Add 1 cup of water and cook for 2 minutes.
Now add tamarind juice,  jaggery  and mix well, cover with lid.
Cook for 4 to 5 minutes on low flame.
Gummadikaya pulusu (pumpkin stew) is ready to serve.
Serve hot with rice
