Mokkajonna palakura vadalu

Corn contains high fiber and the health benefits of corn are numerous, corn is low in fat and high in nutrients. It makes a very good combination with spinach (palak), here is a simple and yummy snack (mokkajonna palakura vadalu)  prepared with corn and spinach leaves. It is healthy and easy to prepare.


Ingredients:

Corn (mokkajonna ginjalu) : 2 cups
Spinach (palakura) : 1 cup
Green chillies : 8
Cumin seeds : 2 tea spoons
Curry leaves : few 
Coriander leaves : few
Onions : 2 (chopped)
Rice flour : 1 table spoon
Oil for deep frying
Salt to taste

Method : 

Grind the corn seeds, green chillies, cumin seeds into thick coarse paste.
Add chopped onions, chopped spinach, coriander leaves, curry leaves, rice flour and salt into above paste, mix well.
Heat oil in a deep bottomed pan.
Make the mixture into round flat shape with hands and gently drop into the oil.
Fry till vadas turn into golden brown colour.
Serve hot with tomato sauce or chutney.
