Methi Masoor Dal Khichidi

Here's a healthy and nutritious dish (Methi masoor dal khichidi), which is prepared with fenugreek leaves, red lentil and rice. It is very tasty and easy to prepare.
Ingredients :

Rice : 1 cup 
Split red lentil (masoor dal) : 1 cup
Fenugreek leaves : 1 cup
Mint leaves : few 
Coriander leaves : few
Onion : 1(chopped)
Green chillies : 4
Bay leaves : 2
Cloves : 4
Cardamom : 3
Cinnamon : 2 (1 inch piece)
Ghee : 2 table spoons
Ginger, garlic paste : 1 tea spoon
Coriander powder : 2 tea spoons
Cashew nuts : few
Salt to taste.
Method :

Wash and soak masoor dal and rice for 30 minutes.
Heat ghee in a pressure cooker add cashew nuts and fry till they turn light brown and keep aside.
Add cloves, cardamom, cinnamon, bay leaves to the remaining ghee and fry for 1 minute.
Add onions, green chillies fry till onions turns light brown in colour.
Add ginger, garlic paste,coriander powder and mix well.
Add fenugreek leaves, mint leaves,coriander leaves and fry for 2 minutes on low flame.
Add soaked rice and masoor dal, mix well.
Add  5 cups of water and salt to taste cover and pressure cook until 3 whistles.
Methi masoor dal khichidi is ready to serve.
Garnish with cashew nuts.
Serve hot with raita or pickle.
