Ulli Kadalu Kodiguddu Kura - Spring Onions Egg Curry

Spring onions (ullikadalu kodiguddu kura) can be used as a combination in many vegetarian and non vegetarian dishes.
Spring onions are loaded with high levels of vitamin C and vitamin K, which are essential for normal functioning of bones.The presence of antioxidants in spring onions helps in preventing damage of DNA and cellular tissue. Here,s a easy and yummy recipe prepared with spring onions and eggs.

Ingredients:

Eggs : 4
Spring onions : 2 cups (chopped)
Green chillies : 2
Curry masala : 2 tea spoons
Garam masala : 1 tea spoon
Tomato pieces : 1 cup
Ginger, garlic paste : 1 tea spoon
Turmeric powder : 1/2 tea spoon
Oil : 2 table spoons
Salt to taste

Method :

Boil and de shell the eggs 
Heat oil in a pan add turmeric powder.
Fry the de shelled eggs in the oil by gently turning the sideways till they turn into golden brown in colour and keep aside.
Add chopped spring onions, green chillies to the remaining oil inthe pan and fry for 2 minutes.
Add curry masala, salt , ginger, garlic paste and fry for 2 minutes on low flame.
Add tomato pieces and fry for 3 minutes on low flame.
Add garam masala and mix well.
Add water as per the gravy requirement.
Now make some small cut marks over the fried eggs with a kitchen knife to allow the absorption of masala.
Add the fried eggs to the boiling gravy and cook for few minutes.
Serve hot with rice or chapati.
