Saggubiyyam totakura Pakoda - Amaranth Leaves Tapioca fritters

Saggubiyyam totakura pakoda is another mouthwatering snack which is prepared with amaranth leaves (totakura) and tapioca (saggubiyyam). It is very crispy, tasty and easy to prepare.
Ingredients :

Amaranth leaves (Totakura) : 1bunch
Tapioca (Saggubiyyam) : 1 cup
Gram flour : 1/2 cup
Rice flour : 2 table spoons
Ginger (finely chopped) : 2 inch piece
Green chilies : 5 (finely chopped)
Cumin seeds : 1 tea spoon
Coriander leaves : few
Salt to taste
Oil for deep dry
Method :

Wash and soak tapioca (saggubiyyam) in water for 20 minutes, drain the water and set aside.
Wash and cut the amaranth leaves, add gram flour, rice flour, chopped ginger and green chilies, cumin seeds, soaked tapioca, salt and mix well.
Add little water at a time to make thick paste.
Heat oil in a karahi/wok make desired shapes with the above mixture and gently drop in the oil.
Fry in low flame till they turn into golden brown in color.
Amaranth leaves tapioca fritters ready to serve
Serve hot with sauce or imli ki chutney.
