Vegetable Gongura Rice - Red Sorrel Leaves Rice

Here's a healthy and delicious rice recipe "vegetable gongura (red sorrel leaves) rice, which is prepared with vegetables and red sorrel leaves. It is very tasty, easy and worth to give a try.

Cooked rice : 2 cup
Red sorrel leaves (gongura) : 2 cups
Onion : 1 (chopped)
Green chilies : 5 (slitted)
Curry leaves : few
Ginger, garlic paste : 2 tea spoons
Green peas : 1/4 cup
Carrot : 1 (cut into small pieces)
Potato : 1 (cut into small Pieces)
Coriander powder : 2 tea spoons
Cumin powder : 1 tea spoon
Coriander leaves : few
Ghee : 2 table spoons
Oil : 2 tea spoons
Salt to taste
Method :

Heat oil in a pan add sorrel leaves fry till turns soft and roasted, let it cool completely.
Grind the roasted sorrel leaves into smooth paste.
Heat ghee in a pan add onions, green chilies, curry leaves and fry till turns light brown.
Add green peas, potato and carrot pieces, fry for 5 to 8 minutes on low flame.
Add salt, ginger & garlic paste, coriander powder, cumin powder and mix well.
Add sorrel leaves paste in to above mixture and fry for 2 minutes on low flame.
Finally add cooked rice and mix well.
Vegetable red sorrel leaves rice is ready to serve.
Serve hot with Raita or kurma.
