Atukula Pesara Pongali

Here's a healthy and yummy recipe atukula pesara pongali. It is prepared with flattened rice and green gram dal, often it prepared on auspicious occasions and festivals to offer to god as prasadam (scared food).

Ingredients :

Flattened rice : 1 cup
Green gram dal (pesara pappu) :1 cup
Jaggery : 1 cup
Cardamom powder : 1 tea spoon
Cashew nuts : few
Almonds : few 
Raisins : few
Coconut milk : 2 cups
Ghee : 2 table spoons
 Method :

Wash and soak dal for 15 minutes, then pressure cook for 2 whistles and keep aside.
Wash Flattened rice (atukulu) and keep aside.
Heat ghee in a pan add cashew nuts, almonds, raisins and fry till turns golden brown in color.
In the same pan add coconut milk and let it boil.
Add flattened rice, green gram dal  into above milk and cook for 5 minutes on low flame.
Now add jaggery and cardamom powder, mix well and cook this for 5 minutes on low flame.
Add roasted cashew nuts, raisins, almonds, ghee into above mixture and mix well.
Atukula pesara pongali is ready to serve.
Serve hot
