Rajma Coconut Rice

Rajma coconut rice is a healthy and delicious rice recipe. Which is prepared with rajma (red kidney beans) and coconut milk, it is tasty and easy to prepare.

Ingredients :

Rajma (red kidney beans) : 1/2 cup
Rice : 1 cup
Cumin powder : 1 tea spoon
Black gram dal : 1 tea spoon
Mustard seeds : 1 tea spoon
Green chilies : 4
Curry leaves : few
Coriander leaves : few
Coconut milk : 2 cups
Ginger & Garlic paste : 1 tea spoon
Mint leaves : few
Salt to taste
Ghee : 1 table spoon
Method :

Wash the Rajma and soak it in enough water overnight.
Pressure cook soaked rajma along with 3 cups of water and salt, till Rajma become soft.
Wash the and soak the rice for 15 minutes and keep aside.
Boil coconut milk in a vessel, add soaked rice to it and cook till done.
Heat ghee in a vessel add black gram dal, mustard seeds, green chilies, curry leaves, coriander leaves, mint leaves and fry till they turn light brown..
Add ginger & garlic paste and boiled Rajma fry for 2 minutes on low flame.
Add cooked rice into above mixture.
Finally add cumin powder and salt  in to above rice and mix well.
Rajma kobbari annam (red kidney beans coconut rice) is ready to serve.
Serve hot with raita or kurma.
