Anapakaya Pulusu Kura

Anapakaya pulusu (Bottle gourd stew) is another famous veg delight, it is prepared with bottle gourd and tamarind juice. It is very tasty and easy to prepare.
Ingredients :

Bottle gourd : 1 (medium size)
Onions : 2 (chopped)
Green chilies : 4
Curry leaves : few
Coriander leaves : few
Ginger & garlic paste : 2 tea spoons
Cumin powder : 2 tea spoons
Fenugreek powder : 1 tea spoon
Sesame powder : 1 table spoon
Turmeric powder : 1 tea spoon
Curry masala : 2 tea spoons
Tamarind Juice : 1 cup
Jaggery : 1 tea spoon
Oil : 1 table spoon
Salt to taste

Method :

Peel the skin of bottle gourd and cut into pieces as you wish.
Heat oil in a pan add onions, green chilies, curry leaves and fry till they turns light brown.
Add  bottle gourd pieces, turmeric powder, ginger & garlic paste and mix well.
Add curry masala, cumin powder, fenugreek powder, sesame powder, salt and fry for 5 minutes on low flame.
Add 1 cup water and cook for 5 minutes on low flame.
Add tamarind juice, jaggery and cook for 4 to 5 minutes on low flame.
Garnish with coriander leaves.
Anapakaya pulusu (bottle gourd stew) is ready to serve.
Serve hot with rice or roti.
