Here is a simple and delicious snack recipe "coriander potato cutlets", is prepared with potatoes and fresh coriander leaves.It is very tasty and healthy too.Ingredients :
Potatoes : 4
Coriander paste : 1/2 cup
Cumin seeds : 2 tea spoons
Coriander leaves : few
Green chilies : 5 (finely chopped)
Ginger & garlic paste : 1 tea spoon
Butter : 1 table spoon
Oil : 1 table spoon
Lemon juice : 3 tea spoons
Salt to taste
Boil the potatoes , remove the skin and mashed them.
Heat oil in a pan add cumin seeds, chopped green chilies fry for 1 minute.
Add coriander paste and ginger & garlic paste fry for 2 to 3 minutes on low flame.
Add mashed potatoes, salt into above mixture and mix well.
Add coriander leaves, lemon juice into above mixture and keep it aside for cooling.
Make the mixture pat into round flat shape with hands.
Heat butter in a fry pan and shallow fry over medium heat until golden brown on both sides.
Coriander potato cutlets are ready to serve.
Serve hot with tomato sauce.
