Gummadikaya Purnalu

Purnalu or burelu is a traditional Andhra sweet dish, here is another variety and tasty recipe gummadikaya purnalu ( burelu) which is prepared with pumpkin, rice flour and jaggery.

Ingredients :

Pumpkin pieces : 2 cups
Rice flour : 1 cup
Jaggery : 1 cup
Cardamom powder : 2 tea spoons
Ghee : 1 table spoon
Oil for frying

For batter

Wheat flour : 1 cup
All purpose flour (maida) : 1/2 cup
Salt : 1/4 tea spoon
Sugar : 1 table spoon

Method :

Boil the pumpkin pieces till they turns soft and make it paste.
Heat water in a pan add jaggery and make a thick syrup by continuously stirring on slow flame.
Add rice flour to the syrup mix well and make tight dough, add pumpkin paste, cardamom powder and ghee into above dough and mix well.
Make round balls with the prepared dough and keep aside.
For cover mix all purpose flour,wheat flour,salt,sugar,  mix well and make it into thick batter by adding little water at a time.
Heat oil in a deep bottomed karahi.
Dip the round dough balls in the batter and fry on slow flame till purnalu turn into golden colour.
Delicious gummadikaya purnalu ready to serve.
